Today my friend visited me in Brussels and I took him around to see tourist areas. It wasn’t his first time in here but he definitely loves here. Varieties of Belgian gourmets including chocolates, waffles and fries always manages to fascinate him everytime.

Later, me and my friend went in the shop to buy some Belgian chocolates. There, we checked the price of macarons which was super expensive (but I find it reasonable considering the effort and time it takes to make them). Price might differ from shops but there it was  €1.75 per piece. And 1 macaron is definitely not enough, especially when there are lots of irresistible flavors available. If I were to be in a happy tourist mood and then I would have probably bought 50 of them. Anyway I stopped my tourist friend from buying them because I could easily make them at home for him. I made coffee flavored macarons this time.

So here are the ingredients and instruction that I used

  • 65 grams  Powdered Sugar
  • 50 grams  Almond Flour
  • 1 egg white
  • 3 tbsp Granulated Sugar
  • 1 1/2 tsp ground instant coffee
  • Vanilla bean

For ganache filling

Instruction

  • Add in the egg whites in a large bowl. Make sure the egg is in room temperature.
  • Whisk it until frothy and add 1 tablespoon of granulated sugar and continue whisking. Add the remaining sugar and keep on whisking until soft peek forms. It takes 8-10 minutes. This is called  french meringue.
  • Sift flour, coffee and powdered sugar together in a bowl and mix it well.
  • Add dry mixture to the meringue and fold it using your spatula. Make sure not to under mix or over mix the mixture. (Fold it about 50 times.)
  • Now take the mixture and put it inside piping bag. Pipe it in a circular direction on a parchment paper. Make sure they are of same size. After you’re done with piping, bang the tray on a surface to let the air out.
  • Now it’s time to preheat the oven in 150 C.
  • Depending on the temperature where you live, let the macarons sit for 15 minutes to 25 minutes in room temperature so that it dries, drying them will give feet to your macarons which is a crucial part
  • After they’ve dried, bake them in the oven for 10-12 minutes.
  • After they’re cooked, take them out and after few minutes remove them from parchment paper and let them sit on wire rack for few minutes.
  • For ganache, all you need to do is heat milk and butter together. Once it starts to form bubble on the edge, take it off from the heat and pour it over chocolate. Mix it well until the chocolate is well dissolved. Refrigerate it for few minutes until it starts becoming solid. Take it out and stir it well with a pork. Put it in the piping bag.
  • After the macarons has completely cooled, pipe chocolate ganache filling. You can desired filling.

Chocolate Macarons with Chocolate Ganache

If someone asks me how my weekend was I will proudly say that it was filled with eating macarons. I keep on wanting to make them since I finally succeeded making macarons on Friday.
Today, I made chocolate macarons with dark chocolate ganache filling. Like last time, I didn’t use stand mixer or a hand mixer to get french meringue. I used balloon whisk instead. I used the same recipe that I used to make vanilla french macarons but I added 2 tablespoon of cocoa powder for chocolate macarons. I didn’t have any cream to make ganache and since today is Sunday almost all shops are closed so I added butter in milk. It’s substitute for cream.

Macarons are not easiest things to make but it’s not that hard either. Everything needs to be correct in order to make it. Ingredients should be correctly measured. Meringue needs to have right consistency, dry ingredients needs to be sifted together and mixed well. Then, it needs to be added to the meringue little by little. And you should be careful not to under mix or over mix them. You probably won’t get perfect macarons on your first attempt, if you do then you’re lucky or you have some hidden talent but if you don’t then it’s alright. You will definitely get there after few attempts. You just need a little bit of patience and determination and you’ll definitely get there. I should probably stop rambling and start with the recipe and ingredients.

Vanilla French macarons with chocolate ganache filling

Hey guys, I am back. I have been occupied with my university and the assignments that I barely had time to make anything. However, I managed some time to make french macarons. French macaron is one of my favorite cookies. I would eat them everyday if I could. But unfortunately it contains lots of sugar and it’s super expensive. Actually it’s reasonable price because it takes lots of efforts to make them.

Okay, let’s be honest. I have always wanted to make perfect macarons and I have attempted to make them about 3-4 times and failed everytime. Because I could not get the right consistency of meringue. And I don’t have a stand or hand mixer (poor student life😦 ).
Today I stumbled upon a youtuber who made beautiful macarons using hand whisk and I was so fascinated by the way he made it. He made it seem easy to make and I was so encouraged to make it. I followed his instructions and recipe.
I had all ingredients required for the recipe so I tried it. Like usual, I was 99.99% sure that it will fail again but 0.1% won this time. YES I SUCCEEDED. I made the fancy french macarons without any machine.

  • Sift t flour and sugar together in a bowl and mix it well.
  • Add the dry mixture to the meringue.
  • Scrape off the vanilla beans and add in the mixture and fold the mixture using your spatula. Make sure not to under mix or over mix the mixture. (Fold it about 50 times.)
  • Now take the mixture and put it inside piping bag. Pipe it in a circular direction on a parchment paper. Make sure they are of same size. After you’re done with piping, bang the tray on a surface to let the air out.
  • Now it’s time to preheat the oven in 150 C.
  • Let the macarons sit for 20 minutes to 30 minutes in room temperature so that it dries, drying them will give feet to your macarons which is a crucial part
  • Bake them in the oven for 10-12 minutes.
  • Take them out and after few minutes remove them from parchment paper and let them sit on wire rack for few minutes.
  • After the macarons has completely cooled, pipe chocolate ganache filling. You can add nutella or any other filling.

Wholewheat chocolate cupcake

It’s been so long that I have not made any posts. It is because I have been a bit busy but hey I managed time to bake something. Actually, I was supposed to be on “clean eating week” meaning I was not supposed to eat anything unhealthy and fattening. But guess I could not stop myself so, here I am with a new cupcake recipe which is “healthier” than the usual ones.

One is a simple vanilla butter cream frosting with little bit of chocolate in it. While the other one is dark chocolate ganache frosting which is healthier than the first one. And personally, I preferred the chocolate ganache frosting more probably because I love dark chocolates. And I used whole wheat flour instead of regular flour. This is not really healthy recipe because this still contains lots of sugar and fat but this is definitely healthier than other recipes and this also tastes different than the “regular cupcakes” but not different in a bad way.

So here goes my recipe and instruction. All the dry ingredients  are in grams because I like weighing them instead of measuring them in cup. That way it is more accurate. 

Ingredients

Makes 12 cupcakes.

For batter

  • Whole wheat flour-. 160 grams (Approx. 1 cup)
  • Confectioners sugar – 100 grams (Approx 3/4 cup)
  • Unsweetened Cocoa powder- 2 and 1/2 tbsp
  • Baking powder- 1 tsp
  • Milk- 260 ml
  • Vegetable oil- 2 tbsp
  • vanilla extract- 1 tsp

For frosting

  • Room temperature dark chocolate ganache
  • Butter- 180 grams
  • Confectioners sugar – 285 grams
  • Chocolate powder- 1 tbsp
  • 1 stick vanilla

Method

  • Preheat oven to 356 C or 180 F
  • Take a large bowl and sift in all dry ingredients (flour, sugar,cocoa powder, baking powder ) and get rid of lumps. Add milk, oil and vanilla extract and stir well. 
  • Line in the cupcake liners in cupcake tray and divide the batter equally.
  • Bake it in the oven for 15- 20 minutes. Check if it is cooked or not by inserting  toothpick into a cupcake, if nothing comes off then it is cooked. Take it out and let it cool for few minutes.
  • Take another bowl and whisk together the butter, sugar, chocolate powder and vanilla seeds together. Once mixed, put it in a piping bag with star tip attached in it.
  • Now take the dark chocolate ganache in a bowl and whisk it until it gets soft. Once ready, put it in another piping bag with a star tip attached in it.
  • Take your cupcakes and decorate it with the way you like it. I added some melted dark chocolate and finely chopped salted peanut.

Okay so today I had my little cousin over my place and he always expects me to make something special for him. I was extremely being lazy today so I just made a simple spaghetti for him but few hours later  he asked me to make him cake and he offered to help aswell. Isn’t that cute? And who can turn down a 6 year old boy? He enjoys being around kitchen and asking questions related to food, and I love answering them. He thinks I am some food expert but in reality I just this amateur cook.

I already had leftover cake crumbs on my refrigerator so instead of making more cakes I thought of utilizing the remaining cake that I had pre-made. But the problem was I didn’t have any frosting. But hey! I had nutella and nutella works really well. Originally I was planning on making cake pops but I didn’t realize I had ran out of cake pop stick but I decided not to make a trip to market. Instead I made cake balls. Cake pops and balls are basically same thing to me except for the way they are served.

This recipe is also useful when you have leftover cake that you don’t want to throw away and you also don’t want to eat. This is also great for small parties like baby showers, birthdays, kitty party; where you won’t have to put extra effort on making desserts.

So, here I have listed the ingredients and methods.

3 ingredients Nutella cake balls

Ingredients

Makes about 12, depending on the size you make.

  • 1 boxed cake mix- Desire flavor
  • 1 cup Nutella (you will possibly need more or less depending on how dry your cake is)
  • Chocolate Chips- 250 grams

Method

  1. Bake cake as instructed in the cake box. 
  2. Let it cool completely and after it cools down crumble it using machine or  your hands. It should resemble the consistency of bread crumbs.
  3. Add Nutella and mix it well. Make sure that you will be able to make ball out of it..
  4. Roll into balls and put it into refrigerator for 15 minutes so that it can hold the shape.
  5. Meanwhile, take double boiler and melt the chocolate.
  6. Now take out the balls and dip it in the melted chocolate and take it out using fork. Get rid of excess chocolate by tapping your one wrist with another (I know sounds stupid, but works really well). 
  7. Put it in wax paper and let it dry completely. And you’re done. Decorate it with melted white chocolate or sprinkles. You can be creative in this part.

3 ingredients easy Cream Popsicle

What is your favorite season? Mine is summer. Even thinking about summer makes me happy, in an ordinary and dull winter day I usually imagine myself  reading a good book under a tree in a warm sunny day while having chilled berries. While the summer is still here I wanted to cherish the moment and enjoy seasonal summer fruits. So I made this easiest popsicle today and you don’t even have to make special trip to market for this recipe. If you don’t have popsicle mold you can use plastic cups too.

Ingredients

Makes 6 popsicles.

  • Heavy Cream- 500 ml
  • Powdered sugar- 4 tbsp (You can add desired amount)
  • Fresh fruits- required (I used Strawberry and Nectarines)

Instructions

  1. Whip cream for few minutes; until you get consistency of plain yogurt.
  2. Add desired amount of sugar into the cream and mix well.
  3. Chop the favored fruits in small pieces and add it into the mixture.
  4. Pour it into popsicle mold or plastic cups. Freeze it for atleast 4 hours.
  5. After they are completely frozen, take the mold out of the freezer and dip it into warm water for few seconds. This way you can take out the popsicles out of molds without any problem.

I sprinkled some shaved pralines that I bought from local store in Brussels.

Since tomorrow is my brother’s birthday I made a cake for him. He is allergic to eggs so I had to find a recipe without eggs. Luckily I found eggless cake recipe from an old recipe book. To me cake without eggs tastes awful, but this time I actually loved this cake. Not because I made it pfft  but because it had strawberries in it and who doesn’t love strawberries? Originally I was planning on adding other berries like raspberries, blueberries but then I could not get fresh and organic ones from my local store and I don’t like using inorganic ingredients (I want to build a mini farm).

People usually ask me if they have to follow the baking instructions step by step? Well, it is important to have correct measurements of the ingredients but as for some ingredients, it doesn’t really matter if you follow it exactly or not. For instance, if the recipe asks for using strawberries in it, you can use raspberry if you want to, or any other fruit that you love. It is all about surprising yourself. But let’s say if the recipe asks you to use baking powder then use it, don’t use baking soda. I hope you got what I wanted to explain. Okay I will stop rambling for now and start writing the ingredients and process.

For chocolate cake

Makes 2 layers of cake. You can divide these ingredients in half for 1 layer of cake.

  • All purpose flour- 300 grams
  • Baking powder- 1 tsp
  • Baking soda- 1 tsp
  • Cocoa powder- 12 tbsp
  • Sugar- 170 grams
  • salt- a pinch 
  • Vegetable oil (I used sunflower)- 1 cup
  • Hot coffee- 1/4 cup
  • yogurt- 1/2 cup
  • Vanilla extract (optional)- 1 tsp 

For frosting

  • Heavy cream- 2 cups
  • Chocolate chips- 250 grams
  • Sugar- Desired amount
  • Few strawberries

Instruction

  1. Preheat the oven to 180 C.
  2. In a large bowl, take all dry ingredients(sugar, flour, cocoa powder, salt) and sift it together. Get rid of the clumps.
  3. Add wet ingredients eventually into large bowl containing dry ingredients.
  4. Mix well using a whisk or electric mixture. Make sure you do not over mix or under mix the batter.
  5. Now take your pans and spray with cooking spray and pour the prepared batter.
  6. Put it inside oven and bake it for about 25 minutes. Insert toothpick in middle of the cake, if nothing comes off then it is cooked (Be careful not to burn your hand).
  7. Take it out of oven and then run the knife around edges of pan. Let it sit for few minutes and transfer it to cooling rack and let it cool completely.
  8. Now it is time to prepare whipped cream. Whisk the cream until soft peak forms up, you can do it using your mixer or by your hand whisk. Make sure you do not over mix.
  9. Cut strawberries into small pieces and fold it in using spatula into whisked cream. Add it in between two layers of cake using spatula or knife.
  10. Prepare simple chocolate ganache by heating  cream in a stove and pour it over chocolate chips. Let it sit for few  minutes and then stir it until chocolate is completely dissolved. 
  11. Now put the cake in wire rack over a baking tray lined with a waxed paper and pour the ganache and spread it well with your spatula (My favourite part).
  12. Decorate with chocolate dipped strawberries and with desired frosting or whipped cream. Go ahead and surprise yourself.
